Aussie Fruit Flag Ingredients:

  • 1 punnet raspberries
  • 1 honeydew melon
  • 3 punnets of fresh blueberries

Method:

  • Take a rectangular platter and make a large rectangle by spreading the blueberries.
  • Make a cross of raspberries on the top left corner of the blueberry rectangle.
  • Make two diagonal lines through the cross by using more whole and halved raspberries.
  • Take a sharp knife and cut the slices(5mm) of honeydew melon. For the Southern Cross, cut one larger star and five smaller stars with the help of the star cutters.
  • Now slightly trim only one star among other stars. After this place these stars in a formation on the blueberry pattern.
  • Draw the line area around the raspberries with the help of thin strips of honeydew.

Note: If you are unable to get hold of raspberries then you can use strawberries for the red portion of the flag. Also, this would be a perfect top for a rectangular pavlova. Apply the thick coat of cream on the top and lay the fruit on it.

Ingredients:

  • 8 black jelly beans
  • 2 tablespoons desiccated coconut
  • 1 cup icing sugar
  • 16 brown mini M&Ms
  • 2 tablespoon milk
  • 8 white mini marshmallows
  • liquid black food coloring
  • 8 milk arrowroot biscuits

Directions:

  • Take a large bowl and put the icing sugar in it and add milk gradually. Make a thick icing by combining it.
  • Very gradually add 1-2 drops of food coloring until the grey color.
  • Spread icing onto biscuits.
  • Use coconut sprinkles on the icing.
  • Now place one black jelly bean for the nose and two M&M’s for making the eyes. For making the ears you need to position two halves after cutting the half horizontal marshmallows.

Tim Tam is basically a biscuit filled with chocolate cream between two chocolate biscuits and covered in more chocolate. These biscuits are invented by Arnott’s Ian Norris and named by Ross Arnott in 1964. Millions of Tim Tam biscuits are eaten every year in Australia.

Ingredients For Cookie Dough:

  •  Softened unsalted 4 ounces or 115 grams butter
  • Granulated 1/2 cup sugar
  •  1 whole large egg
  • Unsweetened cocoa powder: 1/4 cup
  •  1 cup all-purpose flour
  •  pinch of salt

Ingredients For Filling:

  • Softened unsalted 4 ounces or 115 grams butter
  • Powdered Confectioner’s sugar: 1 cup
  •  1 tablespoon cocoa powder
  • Malted drink powder: 1 tablespoon

Ingredients For Coating:

  • 1 tablespoon coconut oil
  •  7 ounces or 200 grams milk chocolate

Instructions For Tim Tam Biscuits:

  • Prepare the Cookies: Mix the butter and sugar to make fluffy cream. Put the egg in this fluffy cream and continue beating until the mixture lightens in color. Now add the cocoa powder.  Add flour and salt and mix it well. Now the dough has been ready. Place the dough onto a piece of parchment paper and roll it in a rectangular shape.  Now refrigerate the dough for 30 minutes.
  • Preheat the oven to 350 degrees.
  • Now take the dough out of the freezer and cut it into 28 small (1.25 x 2.5 inch) rectangles.
  • Put all the rectangles on the baking trays and bake for 10 minutes.
  • Make the Filling: Mix the butter and sugar to make the cream. After getting softened fluffy cream put all the remaining ingredients and beat well.  Now take a heaped teaspoon of filling and spread it onto half of the cookies. Top with the remaining cookie and place it into the refrigerator.
  • Coating: Take a heat-proof bowl and put the chocolate and coconut oil in it. Place the bowl in the microwave until the chocolate melted well. Stir the chocolate after each burst until smooth.
  • Now take all the chilled cookies and coat them in the melted chocolate coating. Now again place all the cookies on a baking tray and chill them in the refrigerator to cool the coating.

4- Aussie Meat Pie Recipe:

Ingredients:

  • 1 chopped onion
  • 1 cup of water
  • 500g beef mince
  • 1/4 cup tomato sauce
  • 2 beef stock cubes
  • 3 tablespoons flour
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon ground pepper
  • 1 pinch salt
  • 1/2 teaspoon dried oregano
  • 1 sheet puff pastry
  • 1 sheet shortcrust pastry
  • 1 egg beaten

Recipe method:

  • Preheat oven at 220 degrees C or 400 degrees F.
  • Take a 12-cup muffin tin and grease it with oil.
  • Cook the meat and onion for 5 to 7 minutes until Browned.
  • Now add 3/4 cup water,  black pepper, salt, oregano, ketchup, Worcestershire sauce, and bouillon cubes.
  • Wait for a boil, reduce heat, and simmer until combined. All this takes about 10 minutes.
  • Take 1/4 cup cold water and cornstarch together in a bowl and stir it well. Now add this into the meat mixture and cook it until thickened for 5 minutes more.
  • Remove it from heat.
  • Line each muffin with puff pastry and grease the pie dish.
  • To cut the pie crusts into 12 circles take a 4-inch biscuit cutter.
  • Now fill the cooled meat mixture; brush edges of the pastry with beaten egg and milk; put the pastry top on; with a fork, press edges down.
  • Glaze top of the pastry with the help of milk or beaten egg and trim edges.
  • Now put the pastry for baking in a very hot oven at 220 degrees Celsius or 400 degrees F for 15 minutes.
  • After 15 minutes reduce heat to 180 degrees and bake it for more 25 minutes or until golden brown.

5- Anzac Biscuits Recipe:

Ingredients:

  • 100g butter
  • 100g plain flour
  • 100g caster sugar
  • 85g desiccated coconut
  • 85g porridge oat
  • some extra butter for greasing
  • 1 tablespoon golden syrup
  • 1 tablespoon of soda bicarbonate
  • 3 tablespoons water
  • 1 cup of sugar
  •  salt according to taste

Recipe Method:

  • Preheat the oven to 350°F.
  • Very lightly grease two baking sheets
  • Take a bowl, put the oats, sugar, salt, coconut, and flour in it. Stir all the ingredients well.
  • Take a small pan and melt the butter in it.
  • Add the golden syrup in it and stir it.
  • Now take a medium-sized bowl and combine the baking soda and boiling water. Mix it well and put it into the hot butter and stir it well.
  • Stir well the butter mixture into the dry ingredients.
  • Now put the teaspoonfuls of the mixture on the greased baking sheets. Leave it to spread at least 1 1/2″ at room temperature.
  • Now bake the cookies for approximately 13 to 15 minutes, until mahogany brown.
  • Let cool down the cookies after removed from the oven. You can store the cookies for a week at room temperature or can freeze for a long time period.

6- Aussie Oi Oi Oi Jellies Recipe:

Ingredients:

  • Take 2 packets (85g) of lime-flavored jelly crystals
  • boiling water
  • 9 plastic wine goblets
  • 1 packet (85g) of pineapple flavored jelly crystals

  • Take one packet of lime jelly crystals

  • Now measure out 50ml portions of lime jelly crystals

  • Preheat the Oven to 225˚ F.
  • Take a large baking sheet with parchment paper
  • beat 6 eggs with a beater at high speed for 1 minute.
  • Now add 1 1/2 cups sugar gradually and beat it for 10 minutes.
  • Take 2 tsp corn starch, 1/2 Tbsp lemon juice, 1/2 Tbsp vanilla extract and mix them until well blended.
  • Using a Wilton 1M Tip, Pipe meringue onto the parchment paper. With a spoon indent the center and give room for cream. Now, bake it at 225˚ for more than one hour (1 hr and 15 min). After this turn, the oven off and without opening its door to let the meringue hot for another 30 minutes. It will dry the outsides and crispy and give a very pale cream-colored. While the insides will still be marshmallow soft.
  • Remove it from heat and transfer the pavlova along with the parchment paper onto the cookie rack. Now allow it to cool down at room temperature. After cool down, you can very easily top the mini pavlova with whipped cream and fruits (fresh kiwi, blueberries, sliced strawberries, etc), mint leaves.
  • It can be stored at room temperature for 3-5 days.

8- Chiko Roll Recipe:

Ingredients For Chiko Roll:

  • 1 egg
  • 200g cooked lamb
  • 1 tbs plain flour
  • 2 tsp butter
  • 1 onion
  • coarsely grated 1 carrot
  • 1 cup green shredded cabbage
  • 1  finely sliced celery stalk
  • 1 chicken stock cube
  • 8 sheet spring roll wrappers
  • vegetable oil (for frying)

Recipe Method:

  • Take a frying pan and melt the butter on medium heat.
  • Defrost the spring roll pastry after removal.
  • Put all the vegetables (onion, cabbage, celery, and carrot) in the frying pan and cook them until soft.
  • Now add the lamb and the chicken stock cube in the vegetable pan and cook until heated through. After this add the plain flour and mix it well.
  • Take a moist clean tea towel and lay the pastry sheets on it.
  • Now lay 3 tablespoons of the mixture at the center of the pastry sheet and fold all the sides to middle and roll it.
  • Take a brush and coat the roll with egg to adhere to the pastry. Rolls must be covered with a moist tea towel. Repeat the process until all the mixture is finished.
  • Now heat the oil in a frying pan and drop all the spring rolls into the oil.
  • Cook all the rolls until golden.
  • After drain on paper towel serves the rolls with sweet chili sauce.

9- Sausage Sandwich Recipe:

  • Sausage sandwich
  • 4 sausages
  • 1 tablespoon brown sugar
  • 2 onions sliced
  • 1 tablespoon olive oil
  • 1/4 cup or 60ml balsamic vinegar
  • 4 bread rolls or slices

Recipe method:

  • Take a frying pan and heat the oil on medium heat.
  • Take 2 finely sliced onions and saute them for 2-3 minutes, until softened.
  • Now take sugar and balsamic vinegar and stir them.
  • Put the mixture on the onions and keep cooking, also stirring occasionally until the onions are tender and caramelize.
  • Cool them slightly.
  • In a second frying pan cook the sausages for 5-10 minutes until browned.
